Baked Ziti – Gangster, Boardwalk Empire Night

My hubby and I are semi-obsessed with Italian food (who isn’t…:)), and last night, considering I was super busy anyway, wanted to whip something up that wouldn’t take too much time.

Ziti Pasta (I used penne, not much difference)

1 cup part-skim ricotta

1 egg, beaten lightly

½ cup parmesan cheese

½ cup shredded mozzarella cheese

3 ½ cups of good quality tomato sauce (I used Dean and Deluca sauce)


Boil the pasta and preheat oven. While the pasta is boiling, mix in a bowl the ricotta, egg and mozzarella cheese until it forms a cheesey-paste-like consistency. Once the pasta is done boiling, begin layering, similar to lasagna: first a layer of tomato sauce, then the pasta, then the white ricotta paste, then more sauce – finally top with extra parm and mozzarella cheese. Bake for 20-25 minutes, or until top is golden brown and cheese is bubbling.


Traditionally it’s served in a deep casserole dish, but I like these individual serving dishes – pretty for presentation.

I made some garlic bread, sauteed mushrooms and caprese salad as side dishes – besides, you’ll have a whole 25-minutes to kill while the pasta is cooking in the oven !
