I kind of came up with this on accident – another go-to-easy reciepe for lazy nights are Tostada’s: fried corn tortillas with layers of different flavors on top. I wanted to add a little something extra, and came up with this — Beef and Bean Tostada’s, which I’m telling you, are delicious !
FYI the ingrediants do matter, particularly with the beef (I go for Sultan Center’s New Zealand thin-sliced sirloin).
Corn Tortillas (2-3 torillas per person)
Can of refried beans (you can make fresh, but it’s a length process)
1-2 packets of Thin Sliced Beef Sirloin
¼ of a large white onion, chopped
2 tomatoes, chopped
Bell Peppers (I mix up the colors and get one of each)
2 Garlic Cloves, chopped
Sour Cream for garnish
Begin by making, or preparing side dishes of guacamole and salsa (you can make them fresh, or buy the ready-made cans. I’ve seen them at both Dean and Delcua and Lulu Hypermarket). Once that’s done, warm the beans in a pot. In a seperate large pan, begin frying chopped onion and bell pepper slices. Add garlic and tomatoes, after the onions have sweat. Finally, add the meat – it shouldn’t take longer than 1-2 minutes max to fry the meat, but if you like it well-done keep it a little longer. While frying, add pepper, salt, and garlic salt.
Have In a seperate pan, warm cooking oil – I use peanut oil, as a healthier alternative. Deep fry the corn-tortillas until crispy, and transfer to a serving plate with a paper towel so as to dry excess oil.
That’s it, then begin layering !
