Banana, Bran and Nut Muffin’s – Get Your Flaxseed and Fiber

My husband and I really like to make sure we get our daily dose of fiber – and  these offer a great solution since it’s packed FULL and are just all-around healthy – a great way to start your morning.

They do take a lot longer than, say, blueberry muffins might – but still, worth the extra 10 minutes or so. Because of all the bran I like to add a sweet touch and add a dab of strawberry jam on top when ready to eat. They are absolutley delicious, my husband stole them all to take to the office !

1 cup unprocessed wheat bran

1 cup buttermilk

4 tablespoons unsalted butter, room temperature

 ¼ cup brown sugar

2 eggs

6 tablespoons unsulphured molasses (you can find this at Lulu Hypermarket)

1 teaspoon grated orange zest

½ teaspoon pure vanilla extract

1 ½ cups all-purpose flour

 ¾ teaspoon baking powder

 ¼ teaspoon salt

¼ baking soda

1 cup large diced bananas

½  cup chopped walnuts

add crushed flaxseed if desired


First, mix in one bowl the buttermilk and bran, in a second bowl the orange zest, vanilla extract, butter, sugar, salt and eggs, and in a third bowl all dry ingredients, flour, baking powder and baking soda. Mix all together after dry ingredients have been sifted. Finally, fold in bananas, flaxseed and crushed walnuts


The recipe calls for another 1 cup of raisins, but I’m not a fan of raisin’s in baked goods so I didn’t include them. Enjoy your healthy morning breakfast – a great way to start the week ahead!
