Lazy Friday Morning Raspberry Chocolate Chip Pancakes

Although my husband isn’t the biggest fan of chocolate in the morning – he usually opts for the standard fried eggs, sausage and toast (it’s his love for England and his British “heart-attack” breakfast pulling through…), but me and my sweet tooth need just a little bit more for that lazy Friday morning… Raspberry Chocolate Chip Pancakes!

They are the easiest thing to make:

1 cup standard Pancake Mix

1 tablespoon of vegetable oil

cup milk

1 egg

1/2 cup raspberry chocolate chips

Raspberry Jam, for dressing (standard semi-sweet chocolate chips can be used as well)

Butter, for dressing

Pancake Syrup, for dressing

 

Mix the ingredients, and pancakes as usual – then add the raspberry chips into the batter. Pour onto frying pan, and flip when one-side is browned. When both sides are browned, transfer to plate, add butter and raspberry jam. Add syrup.

 

As simple as this is, it’s such a great way to start the weekend – and the way I do almost every Friday.
