Chocklate Chip and Oatmeal Cookies

Saturday night, otherwise known as my husband’s “game night” – where football never ends and there’s game, after game, after game, after game *yawn* – I came home from the grocery store and realized my husband had friends over, and my fridge was empty (I have a thing about there always being food to serve and yummy snacks at hand to eat). Quickly, I rushed into the kitchen and whipped up a batch of Chocklate Chip and Oatmeal Flaxeed Cookies.  

¾ cup butter, softened

1 cup packed brown sugar

½ cup sugar

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

2 eggs

1 teaspoon vanilla

1 ½ cups all-purpose flour

2 cups rolled oats

½ cup chopped walnuts or pecans

½ cup semi-sweet chocklate  chips

3 tablespoons of crushed flaxseed


The best part about these cookies is that you’re getting fiber and, although the butter and chocklate part might not be the healthiest, the oats and flaxseed help ! Besides, your house smells like heaven for that half hour while the batches are being baked…
