Apple-Cinnamon Muffins – Winter Season Treats

I’ve realized I enjoy cooking muffins or other baked goods Saturday nights to nibble on through the week – plus, it puts a good spin on a Sunday morning breakfast. It’s a routine that, I guess, just fell together over the last few months. This week, I tried apple-cinnamon muffins, which I particularly like because it incorporates a nice wintery feel with all the cinnamon and apple-chunk bites.


1 1/3 cup all-purpose whole wheat flour

1 cup all-purpose white flour

3 teaspoons of baking powder

1 teaspoon of salt

2 teaspoons ground cinnamon

1/2 cup sugar

4 medium-sized apples, peeled and chopped (you can chop as fine as you like – I prefer the chunks)

1 cup milk

2 eggs

8 teaspoons butter, melted



1/2 cup flour

1/2 cup sugar

2 teaspoons ground cinnamon

1/4 cup room-temperature butter

First, put together in a separate bowl all the dry ingredients: the wheat and white flour, with baking powder, salt, sugar and cinnamon. In a separate bowl mix beat the eggs and mix in the milk and butter. Add the chopped apples to the dry ingredients, then slowly, pour in the egg mix while beating together. Don’t over-mix the batter, since you don’t want to further bruise or cut up the apples. In a separate bowl, mix together the topping – I liked to just use my hands here, and make sure the butter is integrated with all the dry ingredients and forms into a small pea size. Fill the batter in a buttered muffin pan, and add the topping on top. Put in a pre-heated oven at 170 C for 20-25 minutes.


If you’re like me, and like to ease into your morning and relax in the garden (if it’s not too cold) to enjoy the morning breeze, I much prefer to have prepared and baked what I can the night before (or even take it out of the fridge and only plop it in the oven).  With a saucer of piping hot coffee in one hand, I’d prefer to fill the other with a gorgeous apple-cinnamon muffin.
